Comorian cuisine is the fragrant food of a volcanic archipelago in the Mozambique Channel, where Arab, African, Malagasy, Indian, and French influences have created one of the Indian Ocean's most aromatic and least-known culinary traditions. Bantu-speaking peoples from the East African coast were the earliest settlers, bringing cassava, banana, and coconut cultivation. Arab traders arriving from the eighth century introduced Islam, rice pilaf traditions, and the spice trade that would define the islands' economy and cuisine.
Comoros was a key waypoint on Indian Ocean trading routes, absorbing culinary influences from Persia, India, Madagascar, and Zanzibar. The islands became major producers of vanilla, ylang-ylang, and cloves, infusing local cooking with extraordinary aromatic depth.
