The heritage, flavors, and traditions of Comorian cuisine
Comoros was a key waypoint on Indian Ocean trading routes, absorbing culinary influences from Persia, India, Madagascar, and Zanzibar. The islands became major producers of vanilla, ylang-ylang, and cloves, infusing local cooking with extraordinary aromatic depth.
French colonial rule from 1841 to 1975 added French baking and sauce traditions. Malagasy influence contributed rice preparation techniques and certain vegetable dishes. Vanilla (Comoros is a major producer), coconut milk, cardamom, cloves, and cinnamon.
