Burkinabe cuisine is the food of the West African Sahel, where the Mossi, Bobo, Lobi, Fulani, and dozens of other peoples developed agricultural and pastoral food traditions adapted to the semi-arid landscape between the Sahara and the coastal forests. The Mossi kingdoms, which dominated central Burkina Faso for centuries, organized agricultural production around millet, sorghum, and livestock. The harsh climate demanded calorie-dense, sustaining foods that could fuel agricultural labor under intense heat.
French colonial rule from 1896 to 1960 introduced baguettes and cafe culture, which became embedded in urban life. Neighboring Ghanaian, Ivorian, and Malian cuisines share many ingredients and preparations.
Fulani pastoral traditions contribute dairy products.
