A Culinary Portrait

The heritage, flavors, and traditions of Bruneian cuisine

Bruneian cuisine reflects the culinary traditions of a small, wealthy sultanate on the island of Borneo, where Malay cooking traditions dominate alongside influences from the indigenous peoples of the rainforest. The Sultanate of Brunei was once a powerful maritime empire controlling much of Borneo and the Sulu Archipelago. Rice cultivation, fishing, and the harvesting of sago palm have sustained Bruneian communities for centuries. The discovery of oil wealth in the twentieth century transformed the economy but traditional food culture endures.

Malay culinary traditions form the core, sharing much with Malaysian and Indonesian cooking. Chinese immigrant communities contributed noodle dishes and stir-frying. Indian influence appears in roti and curry preparations.

As a devoutly Muslim nation, all food in Brunei is halal. The unique national dish ambuyat, made from sago starch, connects Brunei to the indigenous Borneo food traditions predating Malay settlement. Sago starch, belacan (fermented shrimp paste), coconut milk, lemongrass, and sambal (chili paste).
