Japanese occupation during World War II caused severe food shortages that remain in collective memory. The phosphate mining boom of the mid-twentieth century brought extraordinary wealth to this tiny nation, leading to massive importation of processed foods, canned meats, and Western dietary patterns that dramatically displaced traditional foodways.
When phosphate revenues declined, the dietary damage remained, contributing to some of the world's highest rates of obesity and diabetes. Coconut (the island's most versatile resource), reef fish and tuna (the primary traditional proteins), pandanus fruit (processed into paste and dried), breadfruit (when available), and imported rice and canned goods (the modern staples).
