American military presence since World War II, including the devastating nuclear testing program at Bikini and Enewetak atolls, profoundly disrupted traditional food systems by displacing communities and contaminating traditional food sources. American processed foods, including canned meats, white rice, and refined flour, have significantly altered the modern Marshallese diet.
Coconut (in every form: milk, cream, oil, flesh, and toddy), breadfruit (roasted, boiled, fermented, and dried), reef fish and tuna (the primary proteins), pandanus fruit (processed into paste and dried sheets), and taro (a root vegetable grown in excavated pits).
