Cypriot cuisine is the food of the eastern Mediterranean's third-largest island, where Greek, Turkish, Levantine, and British influences have layered over a foundation of ancient agricultural traditions stretching back to the Neolithic period. Cyprus has been a crossroads of civilizations for over ten thousand years: Phoenicians, Assyrians, Egyptians, Persians, Romans, Byzantines, Crusaders, Venetians, Ottomans, and British all left their mark on the island's food culture. The result is a cuisine that feels Greek at its core but carries distinct inflections found nowhere else. Greek culinary tradition dominates in the Republic of Cyprus, providing souvlaki, moussaka, and the meze tradition.

Turkish Cypriot cuisine in the north shares many dishes but incorporates more Middle Eastern spicing. Levantine influence appears in the use of tahini, halloumi preparations, and certain flatbreads. British colonial rule (1878-1960) introduced afternoon tea, certain baked goods, and institutional foods.

The island's most famous culinary contribution, halloumi cheese, transcends all cultural divisions. Halloumi (the signature semi-hard cheese that grills without melting), olive oil (from ancient groves), dried mint (used more than fresh), coriander seeds (a distinctive Cypriot spice preference), and carob syrup.
