The heritage, flavors, and traditions of Croatian cuisine
Austro-Hungarian influence in the interior brought strudel, schnitzel, and the culture of structured meals. Ottoman influence, though less dominant than in neighboring Bosnia, contributed certain grilled meat traditions and pastry techniques.
The result is a cuisine of unusual range for a small country. Olive oil (Istrian olive oil is world-class), paprika (essential in the interior), truffle (Istria produces some of Europe's finest), sheep's cheese (paski sir from the island of Pag), and Adriatic seafood.
