Five centuries of Ottoman rule introduced grilled kebabs, layered pastries, bean stews, and the culture of fresh salads with white cheese. Greek and Mediterranean influence from the Aegean coast brought olive oil, seafood, and wine traditions. The communist period standardized certain foods while also preserving traditional recipes through state-run canteens.
Post-communist Bulgaria has embraced a revival of traditional cooking. Bulgarian yogurt (kiselo mlyako), sirene (white brined cheese similar to feta), sunflower oil, paprika, and savory (chubritsa, the national herb).
