Bosnian cuisine is the most Ottoman-influenced in the Balkans, reflecting nearly five centuries of Ottoman rule that transformed a medieval Slavic food culture into one rich with grilled meats, layered pastries, slow-simmered stews, and the coffeehouse tradition. The medieval Bosnian kingdom had its own food traditions rooted in livestock herding, grain cultivation, and foraging, but the Ottoman period from 1463 to 1878 reshaped virtually every aspect of Bosnian cooking and dining culture. Ottoman influence brought cevapi (grilled minced meat), burek (filled pastries), dolma (stuffed vegetables), and the ritual of Bosnian coffee.

Austro-Hungarian rule from 1878 to 1918 introduced Viennese pastry traditions, schnitzel, and strudel. Serbian and Croatian culinary traditions share many dishes with Bosnian cooking, though each claims distinctive preparations.

The country's multi-ethnic heritage, with Bosniak, Serb, and Croat communities, creates a cuisine of overlapping traditions with religiously influenced variations. Kajmak (clotted cream cheese), ajvar (roasted pepper and eggplant relish), Vegeta (the ubiquitous seasoning mix), sour cream, and ground beef and lamb.
