Belizean cuisine is the Caribbean's most culturally diverse small-nation kitchen, blending Maya, Garifuna, Creole, Mestizo, Mennonite, East Indian, and Chinese influences in a country smaller than Massachusetts. The ancient Maya cultivated corn, cacao, beans, and squash across what is now Belize for over two thousand years. British colonial rule as British Honduras from 1862 to 1981 layered English-speaking Caribbean food traditions onto this indigenous foundation. Creole cooking, rooted in African and British traditions, dominates the coast and Belize City.
Mestizo cuisine from the north and west reflects Mexican and Guatemalan influence with tamales, panuchos, and corn tortillas. The Garifuna people of the southern coast contribute cassava-based dishes, coconut preparations, and hudut (fish stew with mashed plantain). Mennonite farming communities provide dairy products and poultry.
