Basotho cuisine is the food of Africa's mountain kingdom, where the Sotho people have cultivated sorghum, maize, and vegetables across the highlands and lowlands of Lesotho for centuries. Founded as a nation by King Moshoeshoe I in 1822, who united scattered Sotho clans atop the mountain fortress of Thaba Bosiu, Lesotho developed a food culture shaped by altitude, limited arable land, and a pastoral economy centered on cattle and sheep. The mountains, which rise above 3,000 meters, dictate a cuisine built for sustenance and warmth.

South African influence surrounds Lesotho entirely, sharing many ingredients and preparations. British colonial presence introduced wheat flour and tea culture.

Missionary activity brought European baking traditions. Yet Basotho cuisine maintains its own identity through reliance on wild greens (moroho) foraged from mountain slopes, sorghum beer (joala) brewed for ceremonies, and communal cooking traditions tied to village life. Maize meal (the foundation of papa porridge), wild greens (moroho, gathered from fields and hillsides), sorghum, dried beans, and beef or mutton from highland herds.
