Mini Buns with Vanilla Sauce

Tiny, fluffy yeast buns baked until golden and served swimming in a pool of warm vanilla custard sauce. An irresistible Slovak dessert.

Ingredients

  • 400g all-purpose flour
  • 200ml warm milk
  • 7g dry yeast
  • 2 egg yolks
  • 50g sugar
  • 50g butter, melted
  • Pinch salt
  • Vanilla custard: 500ml milk, 3 egg yolks, 60g sugar, 30g cornstarch, 1 vanilla bean

Instructions

  1. 1 Dissolve yeast in warm milk with a pinch of sugar. Let foam.
  2. 2 Mix flour, egg yolks, sugar, melted butter, salt, and yeast mixture. Knead into soft dough.
  3. 3 Let rise 1 hour. Punch down, form into small walnut-sized balls.
  4. 4 Place balls snugly in a buttered baking pan. Let rise 20 min.
  5. 5 Bake at 180°C (356°F) for 18-20 min until golden.
  6. 6 Make custard: whisk yolks, sugar, cornstarch; heat milk with vanilla, temper into yolk mix, cook until thick. Serve buns in warm custard.

Did You Know?

The name "dukátové" refers to the gold ducat coin — the buns are shaped and colored to resemble little golden coins.
