A warming, broth-based garlic soup thickened with bread cubes and enriched with cheese, beloved as a hangover cure and winter warmer across Slovakia.

Ingredients

  • 10 cloves garlic, minced
  • 1L chicken or vegetable broth
  • 200g stale bread, cubed
  • 100g grated cheese (Edam or Emmental)
  • 2 tbsp butter
  • 1 tsp marjoram
  • Salt and pepper
  • Fresh parsley

Instructions

  1. 1 Melt butter in a pot, sauté garlic over low heat until fragrant but not browned.
  2. 2 Add broth and marjoram, bring to a boil, then simmer 10 minutes.
  3. 3 Add bread cubes, let them soften for 5 minutes.
  4. 4 Season with salt and pepper.
  5. 5 Ladle into bowls, top with grated cheese and fresh parsley.
  6. 6 Serve piping hot.
