Ingredients

  • 500g cassava, grated
  • 1 cup coconut cream
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 tsp vanilla
  • Banana leaves
  • 1/4 cup grated coconut
  • 1 tbsp butter

Instructions

  1. 1 Grate cassava finely.
  2. 2 Mix with coconut cream, sugar, salt, and vanilla.
  3. 3 Stir in grated coconut and melted butter.
  4. 4 Spoon onto banana leaf squares.
  5. 5 Wrap into parcels.
  6. 6 Steam 45 minutes until firm and set.
