Smoked Chicken Pastries

Flaky yeasted pastries filled with smoky shredded chicken, caramelized onions, and a hint of black pepper.

Ingredients

  • 500g all-purpose flour
  • 250ml warm milk
  • 7g instant yeast
  • 60g butter, melted
  • 1 egg
  • 1 tsp salt
  • 1 tsp sugar
  • 350g smoked chicken, shredded
  • 3 large onions, finely diced
  • 2 tbsp butter for filling
  • Freshly ground black pepper
  • 1 egg yolk for glaze

Instructions

  1. 1 Make dough: combine flour, yeast, sugar, salt. Add warm milk, melted butter, and egg. Knead until smooth. Rise 1 hour.
  2. 2 Sauté onions in butter over low heat for 20 min until deeply caramelized. Mix with shredded smoked chicken and pepper. Cool.
  3. 3 Roll dough to 5mm thick. Cut into 10cm squares.
  4. 4 Place filling in center of each square. Fold into triangles or rectangles, sealing edges firmly.
  5. 5 Place on lined baking sheets, cover and rise 20 min. Brush with egg yolk.
  6. 6 Bake at 200°C (390°F) for 15-18 min until golden brown. Serve warm.
