Hot strong coffee laced with Irish whiskey, sweetened with brown sugar, and crowned with a thick layer of cold lightly whipped cream.

Ingredients

  • 150ml hot strong brewed coffee
  • 40ml Irish whiskey
  • 1 tbsp demerara or brown sugar
  • 50ml heavy cream, lightly whipped to a pour

Instructions

  1. 1 Preheat a stemmed Irish coffee glass by filling with hot water for 30 seconds, then pour out.
  2. 2 Add brown sugar to the warm glass and pour in hot coffee. Stir until sugar dissolves.
  3. 3 Add Irish whiskey and stir once to combine.
  4. 4 Lightly whip cream until it just holds a pour — it should not be stiff.
  5. 5 Pour the cream gently over the back of a spoon so it floats on top of the coffee.
  6. 6 Serve immediately. The coffee is sipped through the cold cream — do not stir.
