Preheat a stemmed Irish coffee glass by filling with hot water for 30 seconds, then pour out.

Add brown sugar to the warm glass and pour in hot coffee. Stir until sugar dissolves.

Add Irish whiskey and stir once to combine.

Lightly whip cream until it just holds a pour — it should not be stiff.

Pour the cream gently over the back of a spoon so it floats on top of the coffee.

Serve immediately. The coffee is sipped through the cold cream — do not stir.

The Story Behind Irish Coffee
Irish coffee was created by chef Joe Sheridan at the Foynes airport in County Limerick in the early 1940s. Travel writer Stanton Delaplane later brought the recipe to the Buena Vista Café in San Francisco, launching its worldwide fame.
