1 cup (200g) red lentils (masoor dal), rinsed
1 large onion, finely diced
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 medium tomatoes, chopped
1 tsp cumin seeds
1 tsp ground turmeric
1 tsp ground coriander
1/2 tsp red chilli powder or cayenne
1 litre vegetable broth or water
2 tbsp ghee or vegetable oil
Juice of 1 lemon
Fresh cilantro for garnish
For the tadka: 1 tbsp ghee, 1 tsp mustard seeds, 2 dried red chillies, pinch of asafoetida (hing), 6 curry leaves
