A cylindrical steamed cake made from rice flour and coconut, layered and steamed in a puttu kudam (cylindrical steamer). A traditional Kerala and Tamil breakfast.

Ingredients

  • rice flour (2 cups)
  • grated coconut (1 cup)
  • salt
  • water

Instructions

  1. 1 Mix rice flour with salt and sprinkle water gradually, mixing until it forms a crumbly texture (not a dough).
  2. 2 Layer grated coconut and rice flour alternately inside the puttu maker.
  3. 3 Attach the puttu maker to a vessel of boiling water.
  4. 4 Steam for 5-7 minutes until steam rises through the top.
  5. 5 Push out the puttu and serve with banana, kadala curry, or sugar and coconut.
