A rustic dish from Bihar: balls of wheat dough stuffed with sattu (roasted gram flour) filling, roasted over coal or dried cow dung cakes, served with chokha (mashed eggplant, tomato, potato medley).

Ingredients

  • whole wheat flour (2 cups)
  • sattu/roasted gram flour (1 cup)
  • onions
  • green chilies
  • ajwain (carom seeds)
  • lemon juice
  • mustard oil
  • eggplant
  • tomatoes
  • potatoes
  • garlic
  • ghee
  • salt

Instructions

  1. 1 Knead wheat flour with salt, ajwain, and water into a firm dough. Rest for 20 minutes.
  2. 2 Mix sattu with chopped onions, green chilies, lemon juice, mustard oil, and salt.
  3. 3 Stuff dough balls with sattu mixture and seal. Flatten slightly.
  4. 4 Roast over charcoal or bake at high heat until well-browned and cooked through.
  5. 5 Prepare chokha: roast eggplant and mash with garlic, mustard oil, and salt. Serve litti dipped in ghee with chokha.
