  • 2 medium potatoes, boiled and cubed
  • 200g cooked chickpeas
  • 1 cup plain yogurt, whisked
  • 4 tablespoons tamarind chutney
  • 4 tablespoons green mint-coriander chutney

  • 1/4 cup fresh coriander leaves, chopped

Instructions

  1. 1 Arrange the papdi crackers or fried flour crisps on a serving platter as the crunchy base layer, spreading them out in a single even layer.
  2. 2 Top the crackers with the boiled potato cubes, cooked chickpeas, and diced red onion, distributing them evenly across the entire platter.
  3. 3 Drizzle generous amounts of whisked yogurt, sweet tamarind chutney, and spicy green chutney over the assembled layers in an artful pattern.
  4. 4 Sprinkle the chaat masala, roasted cumin powder, and red chili powder evenly over everything to create the signature complex flavor profile.
  5. 5 Finish with a generous topping of crispy sev noodles and fresh coriander leaves, then serve immediately before the crackers lose their crunch.
