Pillowy, golden fried dough balls made from a yeasted batter, lightly sweet and impossibly airy — Ghana's favourite street dessert.

Ingredients

  • 3 cups all-purpose flour
  • 1 packet instant yeast
  • 1/3 cup sugar
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup warm water
  • Vegetable oil for deep frying

Instructions

  1. 1 Mix flour, yeast, sugar, nutmeg, and salt. Add warm water and mix to a smooth, sticky batter.
  2. 2 Cover and let rise in a warm place for 1 hour until doubled.
  3. 3 Heat oil to 170C. Scoop batter with wet hands or a spoon and drop into hot oil.
  4. 4 Fry until golden brown all over, turning once, about 4-5 minutes.
  5. 5 Drain on paper towels. Optionally roll in sugar while warm.
