Boiled Yam and Plantain with Stew

A wholesome dish of boiled yam, plantain, and cocoyam served with a rich garden egg (African eggplant) stew or palava sauce.

Ingredients

  • 1 large yam, peeled and cut into chunks
  • 2 unripe plantains, peeled and halved
  • 2 cocoyam tubers, peeled
  • For stew: 6 garden eggs (African eggplant)
  • 2 large tomatoes
  • 1 large onion
  • 3 tbsp palm oil
  • 1 scotch bonnet pepper
  • Salt to taste

Instructions

  1. 1 Boil yam, plantain, and cocoyam in salted water until tender, about 25 minutes.
  2. 2 For stew: boil garden eggs until soft. Mash or blend with tomatoes and onion.
  3. 3 Heat palm oil, add the garden egg mixture and scotch bonnet. Cook 15 minutes.
  4. 4 Season with salt and simmer until thick.
  5. 5 Serve boiled tubers with the stew on the side.
