Creamy Baked Rice

A rich Upper Egyptian dish of rice slow-baked in cream and butter until golden on top, creating a decadent, creamy comfort food often served alongside grilled meats.

Ingredients

  • 2 cups Egyptian short-grain rice
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 tbsp butter
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1/4 tsp nutmeg

Instructions

  1. 1 Rinse and soak the rice for 30 minutes, then drain and par-cook in boiling salted water for 8 minutes until half done.
  2. 2 Drain the par-cooked rice and toss with 2 tablespoons of melted butter, then transfer to a buttered baking dish.
  3. 3 Pour the milk and cream mixture over the rice, dot with remaining butter, and sprinkle with nutmeg and white pepper.
  4. 4 Bake covered at 180C for 25 minutes, then uncover and bake for another 15 minutes until the top is golden and the cream is absorbed.
