Rinse and soak the rice for 30 minutes, then drain and par-cook in boiling salted water for 8 minutes until half done.

Drain the par-cooked rice and toss with 2 tablespoons of melted butter, then transfer to a buttered baking dish.

Pour the milk and cream mixture over the rice, dot with remaining butter, and sprinkle with nutmeg and white pepper.

Bake covered at 180C for 25 minutes, then uncover and bake for another 15 minutes until the top is golden and the cream is absorbed.
