Loso na Madesu

A hearty one-pot combination of fluffy rice and tender red beans cooked together with palm oil, onions, and garlic, forming the everyday comfort meal of millions.

Ingredients

  • 2 cups long-grain rice
  • 1 cup dried red beans, soaked overnight
  • 2 tbsp palm oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 bouillon cubes
  • 1 tsp salt
  • 4 cups water

Instructions

  1. 1 Boil soaked beans in water for 30-40 minutes until nearly tender. Drain, reserving liquid.
  2. 2 Heat palm oil in a large pot. Saute onion and garlic until fragrant.
  3. 3 Add rice and stir for 2 minutes to coat in oil.
  4. 4 Add beans, bouillon cubes, salt, and 3 cups of reserved bean liquid.
  5. 5 Bring to a boil, then reduce heat to very low. Cover and cook for 20 minutes.
  6. 6 Fluff with a fork and serve with fried plantains or a simple salad.
