A double-crusted pie bursting with sweet-nutty Saskatoon berries — the treasured wild berry dessert of the Canadian prairies.

Ingredients

  • 5 cups fresh Saskatoon berries
  • 3/4 cup sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp almond extract
  • Pastry for double crust pie
  • 1 tbsp butter, cut into small pieces
  • 1 egg beaten with 1 tbsp water for glaze

Instructions

  1. 1 Toss Saskatoon berries with sugar, cornstarch, lemon juice, and almond extract.
  2. 2 Line pie dish with bottom crust. Pour in berry filling.
  3. 3 Dot the top of the filling with small pieces of butter.
  4. 4 Cover with top crust, crimp edges, and cut steam vents. Brush with egg wash.
  5. 5 Bake at 220C (425F) for 15 min, then reduce to 180C (350F) for 35-40 min until golden and bubbly.
  6. 6 Cool at least 2 hours before slicing to let filling set.

Saskatoon berries are not true berries — they are actually pomes, more closely related to apples than blueberries.
