Toss Saskatoon berries with sugar, cornstarch, lemon juice, and almond extract.

Line pie dish with bottom crust. Pour in berry filling.

Dot the top of the filling with small pieces of butter.

Cover with top crust, crimp edges, and cut steam vents. Brush with egg wash.

Bake at 220C (425F) for 15 min, then reduce to 180C (350F) for 35-40 min until golden and bubbly.

Cool at least 2 hours before slicing to let filling set.

Saskatoon berries are not true berries — they are actually pomes, more closely related to apples than blueberries.

The Story Behind Saskatoon Berry Pie
Saskatoon berries have been harvested by Indigenous peoples of the prairies for thousands of years, eaten fresh, dried as pemmican, and baked into cakes. European settlers adopted the berry enthusiastically, and Saskatoon berry pie became the defining dessert of the Canadian prairies.
