Crispy fries topped with creamy butter chicken sauce and melted cheese curds — the iconic Canadian fusion dish blending Punjab and Quebec in one glorious plate.

Ingredients

  • 1kg potatoes, cut into thick fries
  • 500g chicken thighs, cubed
  • 1 cup tomato passata
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 1 tbsp garam masala
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 300g fresh cheese curds
  • Fresh cilantro
  • Salt

Instructions

  1. 1 Fry potatoes twice (160C then 190C) until crispy, or bake at 220C until golden. Season with salt.
  2. 2 Saute garlic and ginger in butter. Add garam masala, cumin, turmeric, and chili powder. Cook 1 min.
  3. 3 Add chicken cubes, brown lightly. Pour in tomato passata, simmer 15 min.
  4. 4 Stir in heavy cream, simmer 5 more min until sauce is rich and thick.
  5. 5 Pile hot fries onto plates. Scatter cheese curds over fries.
  6. 6 Ladle hot butter chicken sauce over everything. Garnish with fresh cilantro. Serve immediately.
