Riz Sauce Tomate

Rice with Tomato Sauce

Fluffy white rice served with a richly seasoned tomato and onion sauce simmered with beef, the everyday comfort meal of urban Burkina Faso.

Ingredients

  • 3 cups long-grain rice
  • 300g beef, cubed
  • 6 large tomatoes, blended
  • 2 tbsp tomato paste
  • 2 large onions, chopped
  • 3 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 habanero pepper
  • 2 Maggi cubes
  • Salt to taste
  • Water for rice

Instructions

  1. 1 Wash rice and cook in salted boiling water until fluffy. Drain and set aside.
  2. 2 Heat oil and brown beef cubes on all sides. Remove and set aside.
  3. 3 Sauté onions and garlic until golden.
  4. 4 Add blended tomatoes and tomato paste. Cook 15 minutes until oil separates.
  5. 5 Return beef, add habanero and Maggi cubes. Simmer 20 minutes until beef is tender.
  6. 6 Serve tomato sauce generously over the white rice.
