Bruneian Peanut Cookies

Crumbly, melt-in-your-mouth peanut cookies made from roasted ground peanuts and rice flour, lightly sweetened and shaped into small rounds.

Ingredients

  • 300g roasted peanuts
  • 200g rice flour, toasted
  • 100g icing sugar
  • 100ml vegetable oil
  • Pinch of salt

Instructions

  1. 1 Process roasted peanuts in a food processor until finely ground but not oily.
  2. 2 Toast rice flour in a dry pan over low heat for 8-10 minutes until fragrant.
  3. 3 Combine ground peanuts, toasted rice flour, icing sugar, and salt in a large bowl.
  4. 4 Add oil gradually and mix until the dough holds together when pressed.
  5. 5 Press the mixture firmly into small moulds, then tap out onto a baking tray.
  6. 6 Bake at 160°C for 12-15 minutes until set. Cool completely before handling as they are very fragile.
