Process roasted peanuts in a food processor until finely ground but not oily.

Toast rice flour in a dry pan over low heat for 8-10 minutes until fragrant.

Combine ground peanuts, toasted rice flour, icing sugar, and salt in a large bowl.

Add oil gradually and mix until the dough holds together when pressed.

Press the mixture firmly into small moulds, then tap out onto a baking tray.

Bake at 160°C for 12-15 minutes until set. Cool completely before handling as they are very fragile.
