1 onion, finely diced

4 green chillies, finely chopped

2 tbsp fresh coriander, chopped

Instructions

Mash boiled potatoes roughly with a fork — keep some texture.

Add raw mustard oil, onion, green chillies, and red chilli flakes.

Mix well with hands, squeezing and kneading to combine.

Add salt and fresh coriander. Mix again.
