The Mughal Empire (1526-1857) profoundly shaped North Indian cuisine, introducing Persian techniques like slow cooking in sealed pots (dum), rich gravies thickened with nuts, and aromatic rice dishes like biryani developed in the royal kitchens of Emperor Akbar. Portuguese colonizers introduced chiles, tomatoes, and potatoes, which became indispensable, while British colonial rule created fusion dishes like kedgeree and spread Indian curry globally.
