The heritage, flavors, and traditions of Bahamian cuisine

Bahamian cuisine is an island kitchen built on the bounty of the Caribbean Sea, shaped by the Lucayan Taino people who first inhabited these 700 islands, the British colonial period that lasted over two centuries, and the West African heritage brought by enslaved peoples. The Lucayans harvested conch, fish, and tropical fruits long before Columbus arrived in 1492. British colonization from 1718 established plantation agriculture and imported African foodways that would become the cuisine's backbone.

West African cooking techniques, including one-pot stews, rice-based dishes, and deep-frying, merged with the seafood abundance of the shallow Bahamian banks to create a cuisine dominated by conch, grouper, snapper, and crab. American influence from nearby Florida brought fast food culture and imported ingredients, but traditional Bahamian cooking remains proudly distinct.

Junkanoo festival food, fish fries on the beach, and backyard cookouts define the social eating culture. Conch (the defining ingredient), bird peppers (tiny fiery chilies), lime juice (used for ceviche-style preparations), coconut (in rice, breads, and desserts), and pigeon peas.
