Greens in Peanut Butter Sauce

Collard greens or pumpkin leaves simmered in a rich peanut butter sauce with tomatoes and onions, a staple vegetable dish across Zimbabwe.

Ingredients

  • 1 large bunch collard greens or pumpkin leaves, chopped
  • 3 tbsp natural peanut butter
  • 1 large onion, diced
  • 2 tomatoes, chopped
  • 1 cup water
  • Salt to taste
  • 1 tbsp vegetable oil

Instructions

  1. 1 Heat oil in a pot, sauté onions until translucent, about five minutes.
  2. 2 Add chopped tomatoes and cook until softened and saucy, roughly four minutes.
  3. 3 Stir peanut butter into the tomato mixture with one cup water until smooth.
  4. 4 Add greens, stir well, cover, and simmer on low for fifteen minutes until tender.
  5. 5 Season with salt and stir gently. The sauce should coat the greens thickly.
  6. 6 Serve hot alongside sadza as part of a traditional Zimbabwean meal.
