Ingredients

  • 4 large sweet potatoes, peeled and cubed
  • 3 tbsp sugar
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 2 tbsp water
  • 1 tsp vanilla extract (optional)

Instructions

  1. 1 Peel sweet potatoes and cut into even two-centimeter cubes for uniform cooking.
  2. 2 Boil in salted water for fifteen minutes until very tender when pierced with a fork.
  3. 3 Drain well and return to the pot off heat.
  4. 4 Mash until smooth, adding sugar, cinnamon, and vanilla while mashing.
  5. 5 Stir over low heat for two minutes to let the sugar dissolve and flavors meld.
  6. 6 Serve warm in bowls, optionally topped with a sprinkle of cinnamon.
