Sun-dried small fish reconstituted and cooked with tomatoes, onions, and groundnut powder into a savory, umami-rich relish.

Ingredients

  • 2 cups dried fish (kapenta or other small fish)
  • 2 tomatoes, chopped
  • 1 onion, diced
  • 3 tbsp groundnut powder
  • 1 cup water
  • Salt to taste
  • 1 tsp chili powder

Instructions

  1. 1 Rinse dried fish briefly in cold water to remove excess salt and any debris.
  2. 2 Sauté onion in a pot over medium heat for three minutes until translucent.
  3. 3 Add tomatoes and cook for four minutes until they break down into a sauce.
  4. 4 Add dried fish and water, bring to a simmer, and cook for ten minutes.
  5. 5 Stir in groundnut powder and chili powder, mix well, and simmer five more minutes until thick.
  6. 6 Serve hot over nshima as a deeply flavorful, protein-packed relish.
