Small African eggplants cooked with groundnut powder, tomatoes, and onions into a rich, slightly bitter relish traditionally paired with nshima.

Ingredients

  • 500g African eggplants, quartered
  • 2 tomatoes, chopped
  • 1 onion, diced
  • 3 tbsp groundnut powder
  • 1 cup water
  • Salt to taste
  • 1/2 tsp chili flakes

Instructions

  1. 1 Quarter the small African eggplants lengthwise, removing stems.
  2. 2 Boil eggplants in salted water for ten minutes until softened.
  3. 3 Add tomatoes and onion, cook for five minutes until they break down.
  4. 4 Stir in groundnut powder and chili flakes, mixing until a thick sauce forms.
  5. 5 Simmer on low heat for five minutes, stirring gently to avoid breaking the eggplant too much.
  6. 6 Serve warm as a flavorful relish with nshima.
