Nshima with Chicken Stew

Tender chicken pieces braised in a tomato and onion sauce with garlic and curry powder, served over firm nshima as a celebration meal.

Ingredients

  • 1 whole chicken, cut into pieces
  • 3 tomatoes, chopped
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 tbsp curry powder
  • Salt and pepper
  • 2 cups water
  • 4 cups mealie meal for nshima

Instructions

  1. 1 Season chicken pieces with salt, pepper, and curry powder.
  2. 2 Heat oil in a frying pan and brown chicken on all sides for eight minutes until golden.
  3. 3 Remove chicken and sauté onions and garlic in the same pan for three minutes.
  4. 4 Add tomatoes and cook for five minutes until they form a sauce.
  5. 5 Return chicken to the pan, add water, cover, and simmer for forty minutes until chicken is tender.
  6. 6 Prepare nshima separately and serve the chicken stew ladled over or alongside the nshima.
