Soft flatbread layered and soaked in a tangy, chili-spiked yogurt sauce with fresh herbs. This refreshing Yemeni dish is the perfect cool contrast to the spicy, rich dishes that define the cuisine.

Ingredients

  • 4 rounds thin Yemeni flatbread (lahoh or malawach)
  • 2 cups plain yogurt
  • 2 cloves garlic, minced
  • 1 green chili, finely chopped
  • 1/2 bunch fresh mint, chopped
  • 1/2 bunch fresh cilantro, chopped
  • Juice of 1 lemon
  • 1/2 tsp cumin
  • Salt to taste
  • Drizzle of olive oil

Instructions

  1. 1 Mix yogurt with minced garlic, chopped chili, lemon juice, cumin, and salt in a bowl until smooth and well combined.
  2. 2 Fold in most of the chopped mint and cilantro, reserving some for garnish.
  3. 3 Tear or cut flatbread into large pieces and arrange in a shallow serving dish.
  4. 4 Pour the seasoned yogurt sauce generously over the bread, ensuring every piece is well coated.
  5. 5 Let the bread soak for 5-10 minutes to absorb the flavors. Drizzle with olive oil and garnish with remaining herbs.
