A fragrant, amber-hued beverage brewed from dried coffee husks with ginger, cinnamon, and cardamom. This ancient Yemeni drink predates modern coffee and offers a lighter, spiced alternative with gentle caffeine.
Ingredients
4 tbsp dried coffee husks (qishr)
4 cups water
1 tsp ground ginger
2 cinnamon sticks
4 cardamom pods, cracked
2 tbsp honey or sugar
1/4 tsp ground cloves
Instructions
1Lightly toast the dried coffee husks in a dry pot for 2 minutes until fragrant, stirring constantly.
2Add water, cinnamon sticks, cardamom pods, ginger, and cloves. Bring to a boil.
3Reduce heat and simmer for 10 minutes, allowing the husks and spices to fully infuse.
4Sweeten with honey or sugar to taste, stirring to dissolve.
5Strain into small cups and serve hot. Qishr is traditionally enjoyed with dates or sweet biscuits.
