Five-Minute Potatoes

A quick, rustic one-pot dish of sliced potatoes and vegetables simmered in stock until tender, finished with butter and parsley.

Ingredients

  • 6 medium potatoes, peeled and thinly sliced
  • 2 large carrots, sliced
  • 1 large onion, sliced
  • 200g smoked beef or lamb sausage, sliced
  • 500ml lamb or vegetable stock
  • 30g butter
  • Fresh parsley, chopped
  • Salt and black pepper

Instructions

  1. 1 Layer sliced potatoes, carrots, onion, and sausage in a large saucepan.
  2. 2 Pour over the stock - it should just cover the ingredients. Season with salt and pepper.
  3. 3 Bring to a boil, then reduce heat and simmer for 20-25 min until potatoes are tender.
  4. 4 The liquid should reduce and thicken slightly from the potato starch.
  5. 5 Stir in butter and most of the parsley.
  6. 6 Serve in warm bowls with remaining parsley scattered on top.
