Tart Bramley apples baked beneath a golden sponge topping, served warm with custard, a beloved Welsh home dessert.

Ingredients

  • 500g Bramley apples, peeled, cored, and sliced
  • 75g demerara sugar
  • Juice of half a lemon
  • 1 tsp ground cinnamon
  • For sponge: 125g butter softened, 125g caster sugar, 2 eggs beaten, 125g self-raising flour, 1 tbsp milk, 1 tsp vanilla extract

Instructions

  1. 1 Preheat oven to 180C (350F). Butter a 1.5-litre baking dish.
  2. 2 Arrange apple slices in the dish. Sprinkle with demerara sugar, lemon juice, and cinnamon.
  3. 3 Cream butter and caster sugar until light and fluffy.
  4. 4 Beat in eggs gradually, then fold in flour. Add milk and vanilla to loosen.
  5. 5 Spread sponge mixture over the apples, smoothing the top.
  6. 6 Bake for 40-45 min until the sponge is golden and springy. Serve warm with custard.
