Golden, crispy vegetarian sausages made from Caerphilly cheese, leeks, and fresh breadcrumbs, shaped by hand and fried until crunchy.

Ingredients

  • 150g Caerphilly cheese, grated
  • 150g fresh white breadcrumbs
  • 2 leeks, very finely chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp English mustard
  • 3 eggs (1 whole for mix, 2 beaten for coating)
  • Salt and black pepper
  • Extra breadcrumbs for coating
  • Vegetable oil for frying

Instructions

  1. 1 Mix grated cheese, breadcrumbs, chopped leeks, parsley, mustard, salt, and pepper in a bowl.
  2. 2 Bind with one whole beaten egg until the mixture holds together.
  3. 3 Divide into 8 portions and shape each into a sausage shape.
  4. 4 Dip each sausage in beaten egg, then roll in breadcrumbs to coat evenly.
  5. 5 Fry in shallow oil over medium heat for 8-10 min, turning regularly until golden all over.
  6. 6 Drain on kitchen paper and serve hot with salad or chutney.
