Cheese-Filled Crepe Rolls

Golden baked crepe rolls stuffed with a light, sweetened farmer's cheese filling — a beloved Ukrainian comfort dessert.

Ingredients

  • 2 cups milk
  • 2 eggs
  • 1.5 cups flour
  • 1 tbsp sugar
  • pinch of salt
  • butter for frying
  • 400g farmer's cheese (tvaroh)
  • 1 egg yolk
  • 3 tbsp sugar for filling
  • 1 tsp vanilla extract
  • 2 tbsp sour cream
  • butter for baking dish

Instructions

  1. 1 Make thin crepes: whisk milk, eggs, flour, sugar, and salt. Fry thin crepes in a buttered pan, 1 minute per side.
  2. 2 Mix farmer's cheese, egg yolk, sugar, vanilla, and sour cream for the filling.
  3. 3 Place 2 tablespoons of filling on each crepe, fold edges in, and roll into a tight cylinder.
  4. 4 Arrange rolls seam-down in a buttered baking dish.
  5. 5 Brush tops with melted butter and bake at 180°C (350°F) for 20 minutes until golden.
  6. 6 Serve warm with sour cream or berry sauce.
