Ingredients

  • 400g sauerkraut, drained
  • 3 medium potatoes, cubed
  • 1 large carrot, grated
  • 1 onion, diced
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 6 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 bay leaf
  • salt and pepper to taste
  • fresh dill for serving
  • sour cream for serving

Instructions

  1. 1 Sauté onion and carrot in oil in a large pot over medium heat for 5 minutes.
  2. 2 Add tomato paste and cook, stirring, for 1 minute.
  3. 3 Pour in vegetable broth, add cubed potatoes, and bring to a boil.
  4. 4 Add sauerkraut and bay leaf, reduce heat, and simmer for 30 minutes until potatoes are tender.
  5. 5 Stir in minced garlic, season with salt and pepper.
  6. 6 Serve hot topped with fresh dill and sour cream.
