Crispy golden potato pancakes grated from raw potatoes, pan-fried until crunchy outside and creamy within, served with sour cream.

Ingredients

  • 6 large potatoes, peeled and finely grated
  • 1 onion, grated
  • 2 eggs
  • 3 tbsp flour
  • salt and pepper to taste
  • vegetable oil for frying
  • sour cream for serving

Instructions

  1. 1 Grate potatoes and onion, squeeze out excess liquid through a clean cloth.
  2. 2 Beat eggs and mix into the potato-onion mixture with flour, salt, and pepper.
  3. 3 Heat oil in a heavy skillet over medium-high heat until shimmering.
  4. 4 Drop spoonfuls of batter into the skillet, flatten slightly, and fry 3-4 minutes per side until deep golden.
  5. 5 Drain on paper towels and serve immediately with sour cream.
