A thin, fragrant soup made from diluted groundnut paste with vegetables and chicken, served as a warming starter or light meal.

Ingredients

  • 1 cup groundnut paste
  • 4 cups chicken stock
  • 1 chicken breast, diced
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. 1 Dissolve groundnut paste in one cup of chicken stock, stirring until smooth with no lumps remaining.
  2. 2 In a pot, sauté onion and garlic in a splash of oil for three minutes until softened.
  3. 3 Add diced chicken and brown lightly for five minutes, then add tomatoes and carrots.
  4. 4 Pour in remaining chicken stock and the dissolved groundnut mixture, stirring well to combine.
  5. 5 Simmer for twenty minutes on low heat until chicken is cooked through and soup is creamy.
  6. 6 Season with salt and pepper, ladle into bowls, and garnish with fresh cilantro.
